Ingredients

  • 2 lbs. shrimp chopped
  • 2 celery stalks, finely chopped
  • ½ stick butter
  • 2 Tbsp. olive oil
  • 2 green onions, finely chopped
  • 2 garlic cloves, minced
  • 1 cup white wine
  • 2 cups tomato sauce
  • 5 Tbsp. flour
  • 2 cups half & half
  • 64 oz. chicken broth
  • ½ cup Parmesan
  • Salt & pepper to taste

Instructions

  1. Heat a pot over medium heat. Add olive oil, once hot. Add chopped celery stalks and minced garlic and cook for about 2-3 minutes.
  2. Add chopped shrimp and green onions and stir cook for about 2-3 minutes.
  3. Add butter stick and let it melt.Cook for additional 1-2 minutes.
  4. Add flour and cook for 5-6 minutes, stirring constantly.
  5. Pour white wine, give it a good stir and simmer until thickens.
  6. Add tomato sauce and bubbly thicken, stirring constantly.
  7. Reduce heat to low and add broth and simmer.
  8. Slowly pour in half & half stirring constantly. Sprinkle parmesan and stir cook for about 2-3 minutes.
  9. Increase heat to medium and let the soup starts to bubble. Season with salt and pepper.
  10. Serve immediately and enjoy.
